Food Safety 101: How long should we keep and when to throw out

Food Safety 101
A good rule of thumb for food safety is to keep hot foods hot and cold foods cold. Take your time around the dinner table, but start packing up and refrigerating the leftovers within two hours.
The Best Way to Store Leftovers
**Leftovers should be cooled down as quickly as possible. Pack them into several shallow containers rather than one large one, and make sure you don’t stack the containers in the refrigerator (this can trap the heat).  http://www.foodnetwork.com/holidays-and-parties/articles/food-safety-storing-thanksgiving-leftovers.html

How long can leftovers be kept in the fridge?   Experts say up to four days.  Try to reheat (at 165 degrees) only what you’ll be serving at one time rather than reheating the entire portion.
